- – 4 boneless chicken thighs or breasts
- – 1 cup all-purpose flour
- – 1 tsp salt
- – 1 tsp black pepper
- – 1 tsp paprika
- – ½ tsp garlic powder
- – ½ tsp onion powder
- – 3 tbsp vegetable oil
- – 3 tbsp butter
- – 3 tbsp flour
- – 2 cups chicken broth
- – ½ cup milk or heavy cream
- – 1 small onion, finely diced
- **Season the chicken:** Mix flour, salt, pepper, paprika, garlic powder, and onion powder. Coat the chicken well.
- **Brown it:** Heat oil in a large skillet over medium-high heat. Cook chicken for about 5–6 minutes per side, until golden brown and cooked through. Remove and set aside.
- **Make the gravy:** Reduce heat to medium. Add butter and diced onion to the skillet. Cook until the onion softens.
- Sprinkle in 3 tablespoons flour and stir for 1–2 minutes.
- Slowly whisk in chicken broth, scraping up the browned bits from the bottom of the skillet.
- Stir in the milk or cream. Simmer for 3–5 minutes until thick and creamy.
- **Finish:** Return the chicken to the skillet and spoon gravy over the top. Simmer another 3–5 minutes.
