- * 4 large bell peppers
- * 1 pound ground beef
- * 1 cup cooked rice
- * 1 small onion, diced
- * 1 can diced tomatoes, 14.5 ounces, drained
- * 1 cup tomato sauce
- * 1 teaspoon garlic powder
- * 1 teaspoon Italian seasoning
- * 1/2 teaspoon salt
- * 1/2 teaspoon black pepper
- * 1 1/2 cups shredded cheddar or mozzarella cheese
- * 1 tablespoon olive oil

- Large skillet
- * Medium mixing bowl

- Instructions
- Preheat oven to **375°F**.
- Slice the tops off the bell peppers and remove the seeds and membranes.
- Lightly grease a 9×13-inch baking dish and place the peppers upright in the dish.
- Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 2 to 3 minutes.
- Add the ground beef and cook until browned. Drain any excess grease.
- Stir in the diced tomatoes, tomato sauce, garlic powder, Italian seasoning, salt, and pepper.
- Add the cooked rice and stir until everything is well combined.
- Spoon the beef and rice mixture evenly into each bell pepper.
- Cover the baking dish with foil and bake for **30 minutes**.
- Remove the foil, sprinkle cheese over each pepper, and bake uncovered for another **10 to 15 minutes**, until the peppers are tender and the cheese is melted and bubbly.
- Let the stuffed peppers rest for about 5 minutes before serving.
Misty’s Tip
For softer peppers, boil them for about 5 minutes before stuffing. For a little extra flavor, spoon a bit of extra tomato sauce over the peppers before adding the cheese.
