Easy Meatloaf with Stuffing Mix
This easy meatloaf uses stuffing mix for loads of flavor with very little prep. It's a simple, hearty family dinner that's perfect for busy weeknights
- 1 lb ground beef
- 1/2 box stuffing mix
- 1/2 onion, diced
- 1/2 bell pepper, diced
- 1 tsp Italian seasoning
- 1/4 tsp salt
- 1/2 cup ketchup, for topping
- 2 eggs
- 9×5 inch loaf pan
Preheat oven to 350°F.
In a large bowl, combine the ground beef, stuffing mix, diced onion, diced bell pepper, Italian seasoning, and salt. Mix until just combined.
Shape the meat mixture into a loaf and place it in a loaf pan.
Spread 1/2 cup ketchup evenly over the top.
Bake for about 1 hour, or until the meatloaf reaches an internal temperature of 160°F.
Let the meatloaf rest for 5–10 minutes before slicing and serving.
Don’t overmix the meatloaf mixture. Mix just until everything is combined to help keep the meatloaf tinder.
